A pioneer, a culinary genius... Yannick Alléno fell into the cooking pot at a very early age, learning first-hand about hospitality and conviviality in the family bistro. A man of vision and values, it's only natural that he should lay the foundations for a cuisine with a true identity: "Cuisine Moderne". Inspired by Auguste Escoffier, he doesn't hesitate to shake up the fundamentals and transcend this heritage into his own personal interpretation. He creates sauces like perfumes, which, thanks to extraction, fermentation and cryoconcentration processes, exude a quintessence of flavor. In 2008, Yannick Alléno founded the Groupe that bears his name, shaking up the codes of international gastronomy and service. In 2014, he took over the concession of the Pavillon Ledoyen in Paris and installed Alléno Paris, which was immediately awarded three stars. He also designed two other restaurants: the sushi counter L'Abysse** and the gastronomic counter Pavyllon*, making Pavillon Ledoyen the most starred independent establishment in the world. In 2017, his restaurant Le 1947 at Cheval Blanc Courchevel was awarded a third star, a supreme and historic distinction for the chef who now owns two three-star restaurants. With the same quest for the right taste, Yannick is developing the Pavyllon concept in different parts of the world: first in Paris and Monaco, then in 2023 in London.
