Cuisine... an escape to express his singularity. One of the world's top chefs has found a style all his own, between interpretation of the product and a flight of flavors. Free from his Italian-Argentinian cultural heritage, Mauro Colagreco draws on local culture on both sides of the border. The sea, the mountains, the fruits and vegetables from his own gardens... This virtuoso of the oven imagines pictorial scores that play on textures and daring associations. It's a cuisine of invention, of skin-deep improvisation, whose good humor would almost make our beautiful southern sun pale. And it's been a long road to get here. An avid traveler from an early age, Mauro backpacked through Latin America and the Caribbean, discovering the culinary traditions of his homeland. Later, he attended a hotel school in Buenos Aires, where he cut his teeth in one of the capital's prestigious restaurants. In 2001, he moved to France to complete his training at the Lycée Hôtelier de La Rochelle. He worked in a number of top establishments: first Bernard Loiseau's in Saulieu, then l'Arpège with Alain Passard, the Plaza Athénée with Alain Ducasse and the Grand Véfour with Guy Martin. Finally, in 2006, he took the plunge and opened an abandoned bistro: Mirazur in Menton.  Success came swiftly: "Revelation of the Year Award", "Chef of the Year Award" and then, as if by magic... the stars began to fall one by one!
